Recipes and Ideas to Use Microgreens

Microgreens should be refrigerated and washed before use.

Have too many Microgreens? Try... cooking with them, blending them, drying them, freezing them or sharing them!

​

  • The obvious way to eat the greens is in salads but I like to mix a few different kinds together and make "bowls" with whatever else I've got around (rice, quinoa, leftover vegetables, even potatoes or fries, dried or fresh fruit, nuts, seeds, etc and your favorite sauce or dressing.

​

  • Microgreens can be used in place of spinach or kale in any recipe. You can roughly chop them or blend them before adding them to just about anything. I recently used them in place of green onions in latkes. They are super versatile and if you can think of a way to put them in something, it probably works!

​

  • I love the sunflower or broccoli shoots the most on sandwiches or burgers. I eat them out of the container too!

​

  • Radish is great on sandwiches or in soups (works very well with pea soup, pho, cauliflower soup, etc.) and I made a wonderful potato salad in the summer. Nearly any salad will benefit from the added color and spicy kick of Radish Microgreens.

​

  • I like to cook with Microgreens, either I blend them into sauces or they get thrown in soups (vegetable soup, or something like potato leek, or broccoli soup or Asian soups with rice or rice noodles) or pasta or rice or quinoa dishes. I toss them in curries or stews too.

​

  • Another good way to eat Microgreens raw is to top pizza or other dishes where you decorate with them on top just before serving, so it looks extra pretty and adds flavor and color.
